Coconut Fillet

Here's another recipe for Swai Fillet. I used the same spread as yesterday but I mixed shredded coconut and Panko to top it off. 

The Spread: 1 tbsp mayo, lemon juice (half lemon), pinch of salt, pepper, garlic powder, onion powder, sugar, parsley. (Taste it to see if you want to add more of a certain ingredient) 

Preheat oven 425 degrees. Put the spread on top of the fish, sprinkle the Panko with shredded coconut and then pour 1 tbsp of melted butter to help with browning. Bake for 25 minutes. When there is 5 more minutes of cooking time left, sprinkle some mild cheddar cheese. This is optional but makes it very tasty. :) The result: Crispy & Crunchy topping with flaky fish. Yum! Yum!

Panko Crusted Swai Fillet

Ingredients for spread: Garlic Salt, Seasoned Pepper, Basil, Lemon Juice (half a lemon), 1 tbsp mayonnaise, Onion Powder, Garlic Powder. 
Directions: Preheat oven to 425 degrees. Mix ingredients together and spread on top of each fillet, sprinkle Panko, Melt 1 tbsp of butter and pour on top of Panko. Cook for 25-30 minutes depending on thickness of fish. When it has slightly browned, sprinkle cheddar cheese and turkey bacon bits on top. (Turkey bacon should already be cooked, make sure to cook ahead of time) Bake for 5 more minutes. 


Top it off with Bacon

Everything tastes good when topped off with bacon...well not always, but in this case it works. Today's simple brunch: Sesame Tofu bites, mashed potatoes, and Wheat Spaghetti with mild cheddar, hot dog and turkey bacon bits. For a quick way to cook turkey bacon: Broil high in oven for 4 minutes, turn over and continue to broil for another 4 minutes.

Tofu Cheesecake

Ingredients: 
Base: 1 and 1/2 cup Graham Cracker Crumbs, 1 tbsp brown sugar, 4 tbsp melted butter
Filling: half a block of Silken tofu (4 oz), 8 oz pkg cream cheese, 1 and half cup heavy cream, 2 pkg gelatin, 1 cup plain yogurt, 2 tbsp sugar, 1 tbsp honey, 1 tsp vanilla extract.

Gochujang Mozzarella Sticks

This is a very easy snack to create. Take one tbsp of gochujang (Korean hot pepper paste) mix with 2 tbsp of water. Put some garlic olive oil onto sauce pan, put in cocktail wieners and pour in the sauce, stir it around until the sauce has been well incorporated onto the sausage. Cut up string cheese by 1cm and alternate with the cocktail wieners on a kebab stick.

Sauce: Brown Sugar, Soy Sauce, Minced Ginger, Lemon Juice, Star Anise (this sauce is really yummy and it goes well with brown rice if you aren't used to eating brown rice)

Chocolate Parfait


Ingredients: 
-1 pkg Sugar Free Chocolate Pudding (1.4 oz)
-2 cups of 2% milk
-1/2 cup Light Sour Cream
-1 cup cereal 
-1 pkg Lite Cool Whip

Directions: 
Mix the pudding mix with milk, stir in the sour cream. Pudding will set in 5 minutes. Fill each cup or bowl with a little bit of pudding, cereal, cool whip and repeat layers, top with maraschino cherry or desired fruit. The light ingredients makes this parfait delicious and less calories, so go ahead and indulge!

Lemon Pudding with Strawberry Gelee

Ingredients:
-1 pkg Lemon Pudding (Jello brand)
-2 cups milk (I used 2% milk)
-1 cup frozen sliced strawberries
-Small lemon peel
-1 cup water
-3 tbsp of sugar (more or less depending on your preference) 
-1 tbsp gelatin (Knox brand)

Directions: Pour Lemon pudding mix into a bowl, pour in 2 cups milk, whisk for 2 minutes then pour into cups, it will set after 5 minutes so you can start working on the gelee. Pour water into sauce pan, after boil, pour in the strawberries, sugar, lemon peel, and gelatin. Stir until sauce thickens and boils then pour into a small cup and let chill in the freezer for 15 minutes then pour over pudding. Chill and serve!

Thai Iced Tea

Ingredients & Materials:
-8 cups Water
-1 cup Thai Tea Mix (Pantai brand)
-2 cups Granulated Sugar (1 and a half cup for not so sweet)
-3 tbsp Half & Half 
-Cheese Cloth or Filter (if using cheese cloth, use rubber band to keep on pot)
-Pitcher

Directions: Boil water, pour in Thai tea mix, sugar and let it continue to boil for 2-5 minutes. Then take off from heat and let it cool off for 30 minutes. Pour tea through filter or cheese cloth then pour into your pitcher. Keep cold for a couple of hours then pour over a glass of ice, top with Half & Half. Enjoy!!!

Steamed Bun with Soy Sauce Chicken

If you don't have time to make the buns from scratch, you can buy these in the frozen section at the Asian Supermarket. Cut up some parchment squares and place them underneath each bun. After the water has boiled, place them in your steamer for 5-8 minutes then spread hoisin sauce and meat and veggies of your choice. I placed sliced green onions, cucumber, and soy sauce chicken. These make great appetizers and sliders.

Shepherd's Pie

Ingredients: 
Meat Mixture
-1 pkg of Ground Turkey
-2 tbsp butter 
-1 cup chopped onion
-1 tbsp minced garlic
-1 tsp thyme 
-1 Can Chicken Broth
-1/2 cup Red Wine
-1 tbsp Worcestershire sauce
-2 tbsp Ketchup or Tomato paste (ketchup has a sweeter taste)
-2 tbsp all purpose flour
-1 and a 1/2 cup Carrots & Peas (they sell this mixed in a bag, just heat on a stove with water for 6 minutes and strain)
-1/2 cup Sweet Corn

Mashed Potatoes
-3 Large Potatoes
-1/4 cup heavy cream
-2 tbsp butter
-salt and pepper 
-2 egg yolks

Strawberry Panna Cotta

Ingredients: 
🌸 1pkg unflavored gelatin (about 1 tbsp)
💖 3tbsp cold water
🐼 2 cups heavy cream
🍦 1 cup half and half
🍭 1/3 cup granulated sugar
🍓 Strawberries (Frozen or fresh, use preferred amount)
🍩 1 tsp vanilla extract
🍋 Small piece lemon peel
🍬 Dash of Nutmeg (optional)

Breakfast Kebab

Cooking Quail Eggs: Place quail eggs into a sauce pan, fill water to the top of the quail eggs covering them. Pour a dash of salt, set heat on high for 6 minutes. When the timer goes off, rinse with cold water to stop further cooking. 

Breakfast Kebab: Toast bread and spread butter and jam, cut into small squares. Cut turkey in half, cook turkey bacon, cut in half, this will allow you to make two mini kebabs. To make soy sauce egg, just roll the egg around in soy sauce on medium heat. Place all the ingredients according to your preference and you got yourself a breakfast kebab.
