Hot Pepper Tuna Kimbap
I really like hot pepper tuna but couldn't find any at the Korean market the two times that I went there and I couldn't find any recipes online so I decided to mix some ingredients together just so I can still have that hot pepper taste with tuna. I didn't want to make a fresh batch of short grain sushi rice, I wanted to make use of old rice (long grain) so I warmed up the rice in the microwave for a minute and heated the sushi seasoning for 20 seconds in the microwave then poured it over the rice and mixed it.
Sushi Rice: Sushi vinegar, sugar, salt (add according to taste, I used 2tbsp sushi vinegar, 1 tbsp sugar, 1/2 tsp salt)
Hot Pepper Tuna: 1/2 can Tuna in water, pinch of old bay seasoning, 1 tbsp kewpie mayo, pinch of sugar, 1/2 tsp hot pepper paste (gochujang), dash of sesame oil, 1/2 tsp sesame seeds
Makes 4 Kimbap

Spam for Brunch
Sauce:
-1/4 soy sauce
-1/2 cup brown sugar
-1/2 of a lemon
-2 star anise
-1 tbsp minced ginger
-1 tbsp corn starch or tapioca starch mixed with 1 tbsp water (to thicken the sauce)
Heat all the ingredients and bring to a boil, lastly mix in the corn starch with water.
Strain the mixture through a sieve.
Seasoned Dried Squid
This was my first time making Ojingeochae-muchim (Seasoned Dried Squid). This is one of my favorite Korean Banchan (side dish).
Ingredients:
-1 lb Cuttlefish
-1/2 cup gochujang (Korean pepper paste)
-4 cloves minced garlic
-1/3 cup olive oil
-1 tbsp soy sauce
-1/3 cup corn syrup
-2 tbsp sesame oil
-Sesame Seeds for topping
No cooking required, just cut the cuttlefish into smaller pieces, mix the ingredients together first then mix in the cuttlefish.

Ham and Egg Rosettes
Ingredients: 4 sliced ham, 2 eggs, cheddar cheese, salt and pepper to taste.
Directions: Preheat oven to 400 degrees F, Spray cupcake pan with cooking oil, beat 4 eggs, add salt and pepper to taste, place, one ham onto each cup of the pan then pour in the egg, sprinkled cheddar cheese, put in oven for 10 minutes, take out of oven and allow 10 minutes to cool then serve.

Nori Cheese Tamagoyaki
I made the Tamagoyaki with 2 eggs and I seasoned with soy sauce, mirin, dashi, sugar, and pepper. I poured half of the mixture and when it's half done I placed the nori sheet (I used korean seaweed laver). I oiled the pan again and put the rest of the egg mixture. When the egg sheet is half done I sprinkled mozzarella cheese on top and proceeded to roll again. I placed Saran Wrap on top of a bamboo sushi mat and rolled it up and kept it like that while I finished cooking everything else then I returned and cut them up into pieces. The egg only needs to be half done when you roll it because it keeps cooking as you let it cool off.

Chocolate Strawberries
My mom bought me 4 boxes of strawberries from Chinatown so I decided to makes chocolate dipped strawberries for the first time.
