Christmas Jello Shots


Ingredients:
-2 Packs Small Red Jello (Strawberry or Cherry)
-1 Can Condense Milk
-1 tbsp lemon juice
-3 Envelope packs of Knox Gelatin
-2/3 cup preferred alcohol for each red layer
-2/3 cup Peppermint Schnapps for Condense Milk Layer
-1 cup Boiling water for each layer
-1/2 cup cold water to dissolve Knox gelatin

Directions:
Step 1: Boil water in a kettle
Step 2: Pour half of Knox gelatin into mixing bowl
Step 3: Pour 1/2 cup cold water and stir gelatin to make it thoroughly dissolved 
Step 4: Pour red jello, add boiling water, stir well
Step 5: Pour in preferred alcohol and stir well 
Step 6: Pour into bowls, cups, or preferred dish
Step 7: Refrigerate for 3 hours
Step 8: Pour 2 packets of Knox gelatin into mixing bowl, add half cup cold water
Step 9: Mix condense milk with lemon juice
Step 10: Pour in Peppermint Schnapps, stir well, pour on top of red jello layer
Step 11: Repeat same steps for Red Jello

Let each layer cool in the fridge for 3 hours before adding the next layer 
to avoid being mixed in with the other layer.

Beef Enchilada Casserole

Ingredients: 
2-3 Cups preferred meat (Ground beef or sliced beef) 
1 can roast beef in a can 
1 can mexicorn
1/2 onion or 1 whole onion
1 small can preferred beans
18 small corn tortilla
1 can enchilada sauce 
1/2 packet of taco seasonings
2 cloves garlic 
1 tbsp olive oil
2 packs Mexican cheese

Directions:
1) Pour olive oil and chopped minced garlic onto pan
2) When the garlic has started browning, put in the meat and stir until cooked well, drain off excess fat
3) Put in the roast beef along with the gravy that comes in it
4) Pour in the taco seasonings
5) Add Pepper to taste
6) Heat enchilada sauce in a saucepan and add sugar, salt to taste 
7) Heat beans in a saucepan
8) Now time to assemble your casserole, preheat oven to 350 degrees
9) Place a bit of enchilada sauce just to cover the bottom of the pan 
10) Place 6 tortilla, they can overlap a bit
11) Place all the beans and then the meat
12) Top with cheese and repeat the process: meat, tortilla, cheese
13) For the last layer of tortilla, pour the rest of the enchilada sauce
14) top with remaining cheese
15) Bake for 20-25 minutes 
16) Serve with sour cream, lettuce, and Spanish rice

Cheese Ramen

Cheese Ramen with Dumplings, Lil Smokies, Soft Boiled Eggs. I just cooked ramen with the seasonings and separated it from the soup, then sprinkled mozzarella cheese on top then poured the soup according to how much I wanted, this helps prevent from having soggy noodles. 

Pepperoni Wrapped Lil Smokies

Using white bread, I cut diagonal and across to get 4 square pieces then put some mozzarella onto each piece, pepperoni, the lil smokies, top with more mozzarella, and I used a toothpick to keep it in place, then baked at 350 degrees for 10-12 minutes.
