2-3 Cups preferred meat (Ground beef or sliced beef)
1 can roast beef in a can
1 can mexicorn
1/2 onion or 1 whole onion
1 small can preferred beans
18 small corn tortilla
1 can enchilada sauce
1/2 packet of taco seasonings
2 cloves garlic
1 tbsp olive oil
2 packs Mexican cheese
Directions:
1) Pour olive oil and chopped minced garlic onto pan
2) When the garlic has started browning, put in the meat and stir until cooked well, drain off excess fat
3) Put in the roast beef along with the gravy that comes in it
4) Pour in the taco seasonings
5) Add Pepper to taste
6) Heat enchilada sauce in a saucepan and add sugar, salt to taste
7) Heat beans in a saucepan
8) Now time to assemble your casserole, preheat oven to 350 degrees
9) Place a bit of enchilada sauce just to cover the bottom of the pan
10) Place 6 tortilla, they can overlap a bit
11) Place all the beans and then the meat
12) Top with cheese and repeat the process: meat, tortilla, cheese
13) For the last layer of tortilla, pour the rest of the enchilada sauce
14) top with remaining cheese
15) Bake for 20-25 minutes
16) Serve with sour cream, lettuce, and Spanish rice
